@_ashleysplace_ EP 9: 1 Pan Chicken Fajita Tray Bake Recipe It’s soooo simple to make for a busy weeknight meal yet so delicious 😋 For Ep 9 of Come cook with me, I took my Chicken Fajita Recipe and turned it into a tray bake because who doesn’t love a tray bake and the roasty toasted veggies are devine 😋 Depending how big your tortillas are this should feed about 4 people Ingredients: 🫑 500g of Chicken thigh mine were big so i used 2 but if smaller use more 🫑 1 red onion sliced 🫑 3 capsicums sliced red, green & yellow 🫑 3/4 Tsp Cumin Powder 🫑 1 Tsp of Paprika 🫑 1/4 Tsp of Chili 🫑 4-5 garlic cloves crushed 🫑 1 Lemon Juiced 🫑 1/4 tsp salt 🫑 Tortilla Wraps of your choosing mine weren’t great they fell apart 🙊 Sauce: 🫑 2-3 tsp of Siracha sauce @marionskitchen 🫑 2 Heaped Tbsp of Greek Yogurt @tamarvalleydairy 🫑 A squeeze of lemon or lime whatever you have 🫑 And a large corn on the cob 🌽 you can use can if you need How to make them: 🧡 Preheat your oven to 180C 🧡 Mix your spices together in a bowl 🧡 Slice all your veggies and pop into the tray, add your chicken, squeeze your lemon, add about 1 tbsp of oil and all your herbs including the crushed garlic and give it a good mix around. Add the whole lemon rinds in the pan too 🧡 Pop into the oven to bake for about 45 minutes and check your chicken, if done remove from the oven, leave your veggies in to get a bit more colour if needed and wrap your chicken on a plate covered in foil to keep it warm. Cookie veggies for another 10 mins and crank the oven to 200C. If your veggies are coloured and cooked at 45 then skip this step take them all out 🧡 Make the yogurt sauce add your siracha with yougurt, lime or lemom and a dash of salt I do about 3 good tsp of siracha but I love spice so you can do less. Give it a good mix 🧡 Cook your corn in the microwave by wrapping in baking paper, tie it like a bon bon and microwave for 3-4 mins. Once cooked cut off the corn pieces with a sharp knife but carefully its hot! 🧡 Slice your chicken.
