All the classic fajita flavours in a fuss-free tray bake! This one-pan chicken recipe is quick, colourful, and perfect for meal prep.

You know by now I love a Tray Bake and I decided to take my Chicken Fajita Recipe and turn it into a Tray Bake to make a quick easy weeknight dinner. The flavours are that delicious Roasty Toasty we all love.

Ingredients
- π« 500g of Chicken thigh mine were big so i used 2 but if smaller use more
- π« 1 red onion sliced
- π« 3 capsicums sliced red, green & yellow
- π« 3/4 Tsp Cumin Powder
- π« 1 Tsp of Paprika
- π« 1/4 Tsp of Chili
- π« 4-5 garlic cloves crushed
- π« 1 Lemon Juiced
- π« 1/4 tsp salt
- π« Tortilla Wraps of your choosing mine werenβt great they fell apart π
- Sauce:

π« 2-3 tsp of Siracha sauce

π« 2 Heaped Tbsp of Greek Yogurt
- π« A squeeze of lemon or lime whatever you have
- π« And a large corn on the cob π½ you can use can if you need
Directions
- π§‘ Preheat your oven to 180C
- π§‘ Mix your spices together in a bowl
π§‘ Slice all your veggies and pop into the tray, add your chicken, squeeze your lemon over the top, add about 1 tbsp of oil and all your herbs including the crushed garlic and give it a good mix around. Add the whole lemon rinds in once mix as well into the tray.
π§‘ Pop into the oven to bake for about 45 minutes
π§‘ While cooking make the yogurt sauce, add your siracha with yogurt, lime or lemon and a dash of salt I do about 3 good tsp of siracha but I love spice so you can do less. Give it a good mix
π§‘ At 45 minutes check your chicken, if chicken is done remove from the oven, leave your veggies in to get a bit more colour if needed and wrap your chicken on a plate covered in foil to keep it warm. Cookie veggies for another 10 mins and crank the oven to 200C. If your veggies are coloured and cooked at 45 then skip this step take them all out, I like to give them a little extra colour
π§‘ Cook your corn in the microwave by wrapping in baking paper, tie it like a bon bon and microwave for 3-4 mins. See notes below for this. Once cooked cut off the corn pieces with a sharp knife but carefully its hot! You can also use tinned or frozen corn for this just warm it up
π§‘ Slice your chicken. Add some Avocado first, then your fajita veggie mix & chicken, the corn and then sauce on top to your fajita wrap and serve

- You can make this a bigger version if you are feeding more people, simply double the recipe. But this is also great for a freezer dish too
- I like to give my veggies extra time to cook as I like them to have a nice colour and flavour but if yours is cooked to your liking after 45 minutes then simply take it out
- If you don't like spice you could simply add mayo, sour cream or yogurt by itself
