Looking for deliciously crispy potatoes. Boiling your potatoes first makes the most delicious crispy perfect roast potatoes for your holiday side dishes or really anytime of the year. I learnt this from the great Jamie Oliver years & years ago and always do this when roasting potatoes

Your new favourite potatoes are here! If you haven't made them like this before give them a go you will fall in love with the crispy outside and fluffy inside. You can make as many as you need for this dish and I don't really measure my herbs I just sprinkle them over

Ingredients

  • 5 Potatoes peeled and chopped into quarters

  • Herbs of your choice I always use approx. 2 Garlic Cloves Minced or 1 tsp of Garlic Powder

  • ½ Tsp paprika

  • ½ Tsp onion powder

  • Either ½ Tsp oregano or rosemary 

Directions

  1. Bring a pot of water to the boil and preheat your oven to 180°C 

  2. Peel your potatoes and chop into quarters and add carefully into the boiling water. Boil for about 15 minutes or until just soft. Check them after 10 minutes to see as this will depend on the size of your potatoes. We want them just soft but not falling apart, if at 10 minutes they are done take them off

  3. Once soft drain the potatoes and use you colander (strainer)  to shake them around either over the sink or the pot so you don't get water everywhere. This creates the fluffy outsides which make them super crispy 

  4. Coat in some oil and your fav herbs and onto a baking tray

  5. Cook away for about 1 Hour or until they are nice and golden crispy brown turning half way through

  6. Once cooked add some salt and pepper and serve right away
