For this beautiful and delicious Gingerbread Meringue Wreath I made it in conjunction with my business Bake it by Giovannellis and used our delicious Gingerbread baking mix to make these super cute Mini Gingerbread Men.

This is such a beautiful festive dessert that will look stunning as a table centerpiece too. But also taste delicious too
Ingredients

8 Meringue nest, I made these using me meringue recipe which you can grab here you can also use store bought ones as well but homemade is delicious

Mini Gingerbread men, I made Gingerbread and shortbread ones from Bake it by Giovannellis

Fruit of your choice, I used 1 pack of raspberries and 1 Nectarine sliced. It is summer for Christmas in Australia so we have lots of summer fruits available
Chocolate Cream

300ml whipping (heavy) cream

A spoon cocoa powder whipped together.
I use a Belgium cocoa powder but a Dutch Processed one would work perfectly too. I don't add any sugar in as I don't think its needed when you are eating it with but you can add a spoon of icing sugar if you want some added sweetness
Directions
Arrange your meringue nest in a circle, on a serving platter or cake stand. You can use a plate too but a flat surface is best
Add a spoon of your chocolate cream in the center of the meringues and spread it out a little bit to coat the top of the meringue nests
Add your fruit, you can alternate things like berries from side to side and then add your nectarines, its's all about filling in the gaps. Place some on top of the meringues, in-between and on the bottom
Then pop your mini gingerbread men on top and crush up a little bit of gingerbread cookie and sprinkle over the top. It adds a bit more texture

Recipe Note
- I assemble this before we eat it a couple of hours is ok but if you do it too far in advance the cream will soften the meringue and gingerbread too much and your fruit can sweat into the meringue and cream especially in the Aussie summer.
- You can get everything ready, make the meringue, make the cream etc in advance even chop the fruit but just assemble before you serve it. It doesn't take long You can easily switch it up with your favourite fruit and even use plain cream if you are not a chocolate fan.
- This looks great as a Christmas Centerpiece
