12 Recipes of Christmas: Gingerbread Meringue Wreath

Ingredients

  • 8 Meringue nest, I made these using me meringue recipe which you can grab here you can also use store bought ones as well but homemade is delicious

  • Mini Gingerbread men, I made Gingerbread and shortbread ones from Bake it by Giovannellis

  • Fruit of your choice, I used 1 pack of raspberries and 1 Nectarine sliced. It is summer for Christmas in Australia so we have lots of summer fruits available

blank

  • 300ml whipping (heavy) cream

  • A spoon cocoa powder whipped together.

I use a Belgium cocoa powder but a Dutch Processed one would work perfectly too. I don't add any sugar in as I don't think its needed when you are eating it with but you can add a spoon of icing sugar if you want some added sweetness

Directions

  1. Arrange your meringue nest in a circle, on a serving platter or cake stand. You can use a plate too but a flat surface is best

  2. Add a spoon of your chocolate cream in the center of the meringues and spread it out a little bit to coat the top of the meringue nests

  3. Add your fruit, you can alternate things like berries from side to side and then add your nectarines, its's all about filling in the gaps. Place some on top of the meringues, in-between and on the bottom

  4. Then pop your mini gingerbread men on top and crush up a little bit of gingerbread cookie and sprinkle over the top. It adds a bit more texture
