12 Recipes of Christmas: Airfryer Smashed Potatoes

These are so simple to make but are absolutely crispy deliciousness.
Ingredients

5 Potatoes Peeled and Chopped into quarters

Herbs of your choice I always use 2 Garlic Cloves Fresh or 1 Tsp of Garlic powder

1 Tsp paprika
-
½ Tsp Onion powder
-
Either ½ Tsp oregano or rosemary

1 Tsp Olive Oil
Directions
Bring a pot of water to the boil
Peel your potatoes and chop into quarters and add carefully into the boiling water. Boil for about 15 minutes or until just soft. Check them after 10 minutes to see as this will depend on the size of your potatoes. We want them just soft but not falling apart. If they are done after 10 mins take them off
Once soft drain the potatoes & coat in some oil and your fav herbs and onto a baking tray
Pop into the airfryer at 180°C for 15 minutes
After 15 minutes squish down with a fork from the flat side of the potato as it's easier to squish. It should be pretty easy to squash these with a fork as they should be nice and soft. If not pop them back to cook a bit longer. Once squished add a little bit more oil, I like to use the spray oil when I am oiling things inside the airfryer so you don't get big drips of oil on the bottom
Pop back on to cook at 180°C for 10-15 minutes until golden brown. If yours aren't golden pop them back on to cook a bit longer
Once cooked add some salt and pepper and serve right away

- Don't overboil these as they will fall apart. Boil for 10 minutes, check them and take them off if they are soft enough
- Don't push too hard on the potatoes they should break easily and you don't want to break the airfryer. You can always take them out, squash them and pop them back in
