These delicious Banana Oat Pancakes are one of my absolute favourites. They are super filling and keep you full for longer plus you can make them ahead of time to make that morning rush a little easier.
Ingredients

1 Ripe Banana

2 Eggs
-
¼ Cup Rolled Oats
-
Dash of Cinnamon
-
Handful of Berries
Directions
Mash your banana in a bowl then add the eggs, oats & cinnamon
Give it a good whisk around with a fork until it's all incorporated. Then add in your berries and mix again
Add a little bit of butter in a fry pan on a low temp, you don’t want it high it will burn the outside & not cook inside
Cook for approx 2-3 mins until it starts to firm up all over & the flip it. I find it much easier to flip with a plate.
Cook on the 2nd side for another 2-3 minutes or until cooked through

You will get about 3 pancakes out of this, just double the recipe if you want moreEat them hot or cold and I sometimes like to top it with greek yogurt & more berriesThese are not a sweet pancake so you can add honey or maple if you want the sweetness it’s up to personal taste and I love it as isIf you want to see how we made this you can check out our reel here
