These are a favourite of mine to make and such a filling delicious option for lunch or dinner. You can also add whatever toppings or salad options that you like

Such a great lunch or dinner option that is so easy to make. You can make a big batch of beans ahead of time and freeze them for an easy lunch option. 

Burrito Bowls

Ingredients

  • 1 Piece of Corn on the cob

  • 5 Cherry Tomatoes

  • 2-3 Lettuce leaves chopped

  • ¼ of a cucumber

  • ¼ of a capsicum

  • ¼ Red onion

  • Optional: 1 tbs Jalapeños chopped

  • 1-2 Tbsp of Salsa

  • 1-2 Sprigs of Coriander

Directions

  1. Cook your corn, I do mine in the microwave wrapped in baking paper for a few minutes then I like to char it after to get that char/smokey taste but you can leave just steamed

  2. Heat up about 100g of beans (see notes)

  3. Chop all your salad/veggies into small pieces I usually cut mine into ¼ pieces and slice your lettuce. I then mix the onion, tomatoes, cucumber and jalapeños together with a little jalapeño juice or you can do it with some lemon to make a pico de gallo.

  4. Add your Beans to the bottom of your bowl then top with your lettuce, pico mix, capsicum, corn, coriander a dash of salt & pepper to taste and then a good heaped tbsp of salsa. My fav is the Gran Luchito I switch up between the flavours.

  5. Serve and enjoy.
