Now you can call them what you like I have seen these both called Smashed Burgers and Smashed Tacos and we made a burger version recently which then got me thinking about making a chicken version and it was delicious. I absolutely love making these as a way to switch up the weeknight dinners but also a classic way to switch up a salad or burger.

Ingredients

200g Chicken Mince

2 Tbsp of Parmesan

6 - 8 Lettuce Leaves *Note 1

2 Small Wraps I use Simson Pantry Wholemeal *Note 2

2 Tbsp Caesar Dressing
-
Salt and Pepper to taste

Approx. 1/8 tsp of both Garlic and Onion Powders *Note 3

2 Bacon Rashers Diced
Directions
Dice your bacon into small pieces and cook for a few minutes on medium-higher temp until cooked and crispy. We want crispy little pieces. Don’t add any oil you shouldn’t need it. Once it is cooked drain on a paper towel and pop to the side while you cook the rest
Mix your mince with the onion and garlic powered and add to the one side of your wrap. Chicken mince is a little wetter than normal mince so may be a little harder to get around evenly, but push it flat right to the edges and make it as even as possible so it cooks properly. It should be a thin layer not a thick one. It is about 100g per wrap. See note 4
Add to your fry pan on a medium heat not too high. without any oil (you shouldn’t need it) * See Note 5 cook for approx. 2 minutes or until your meat is cooked through then flip onto the other side to cook the wrap. This will only take about 1 minute, don’t let it burn so keep an eye on it.
Slice your lettuce and mix together with the dressing and parmesan cheese
Once your wrap is done add the lettuce mix, salt and pepper to taste, the bacon and add a little more dressing if you like too. Enjoy right away they are best eaten hot

FAQs & Notes:
- I used cos lettuce and about 3 lettuce leaves per taco but it depends on the size of your leaves. You want a good amount of lettuce to bulk this out.
- I use the Simsons Pantry Wholemeal Wraps but I love wholemeal, you can use any of your fav wraps or even soft shell tacos to make these. If your wrap is bigger you will likely need more mince. My Wrap is approx. 42g in size.
- The Garlic and Onion Powder is just to add a little but of flavour to the chicken mince. But we only need a really small amount which is why we don't measure it out you likely need about 1/2 of 1/4 spoon of both. I just add a dash of both
- The amount of mince depends on your wrap size so if your wraps or tacos are smaller use less mince. You only want a layer that is about 1-2mm thick so nice and thin and even.
- I don't add oil to this as it shouldn't need it the mince produces enough oil so it shouldn't stick. If you have a sticky pan though you may need some
Q. Can I make these ahead of time?
A. I wouldn't recommend it as they are best eaten hot, you could prep the salad etc before hand and the mince get it mixed but I would cook these fresh to be eaten fresh and hot
Q. Can I add more salad
A. Yes definitely, I kept this as a simple Caesar version but you can add tomatoes, capsicum or cucumber whatever you like
