Chicken Fajita Wraps

These homemade Fajita Wraps are delicious and simple to make, while you can buy the packet mix these are so simple to make and the flavour is delicious and pretty easy to make at home

Chicken Fajita Wraps

Ingredients

    blank

    • 500g of Chicken Breast cut into pieces or strips

    • 1 red onion sliced

    • 3 capsicums sliced red, green & yellow ( I like alot of capsicum so use less if you dont)

    • 3/4 Tsp Cumin Powder

    • 1 Tsp of Paprika

    • 1/4 Tsp of Chili

    • 2 garlic cloves crushed

    • 1/2 Lime

    • 1/4 tsp salt

    • Wraps in used were Simsons Pantry

    • 4 Tablespoons of Yogurt (sour cream will work too)

    • 2 Tsp of Coconut Siracha

    • Squeeze of Lime Juice

    • 1 Avocado mashed 

    • 1/2 a Puneet of tomatoes 

    • Small handful of Coriander 

    • Good squeeze of lime juice 

    • Salt and pepper to taste 

    • Tablespoon of Jalapenos (optional) 

    Directions

    1. Add your spices with 1/2 a the juice of a squeezed lime to the cut chicken to marinate, you can leave this for an hour or so to add more flavouri if you have time but if you don't you can cook it straight away it will still taste delicious 

    2. Slice all your capsicum and red onion then cook off the onion for about 3 mins on medium heat and add the capsicum and cook for another 5 minutes till it browns and softens, if you have a skillet pan use that if not a regular pan works perfectly too

    3. Remove the vegies from the pan, don't wipe or clean the pan just add the chicken straight into the pan on the same temp for about 5 minutes until cooked through stirring occasionally, this will depend on the thickness of the chicken 

    4. While the chicken is cooking make your guacamole mash your avo, and add in your chopped tomatoes, chopped coriander, squeeze of lime juice & salt/pepper. Optional you can also add Jalapeños if you like spice

    5. Now to make the yogurt sauce, add your yogurt, siracha, lime juice and salt & Pepper into a bowl and give it a good mix to combine

    6. Once the chicken is cooked add the capsicum mix back to the pan and give it a good mix around to coat and reheat it 

    7. Once done heat your wrap, I heat mine on pan with no oil for a few seconds each side and add the guacamole, fajita mix and sauce and enjoy
