This is a hearty and delicious salad that is perfect for those winter lunches or as a side to your next dinner 

Chicken & Sundried Tomato Cous Cous Salad

Ingredients

  • 1/2 Cup of Cous Cous
  • 1/4 of a cut Kent pumpkin cubed

  • A good dash of herbs for pumpkin I used onion powder, garlic powder, Italian herbs & paprika

  • 1/4 of a cucumber diced

  • 1/4 of a Capsicum diced

  • Handful of chopped up baby spinach leaves

  • A handful or so of semi sundried tomatoes 🍅

  • A couple of sprigs of mint (optional)

  • Ranch or your fav dressing

  • 1-2 Tbsp of pine nuts

  • 1/4 of fetta block I use the dodoni brand which is my fav

  • About 200g of Chicken I used left lover thigh that I had from dinner but you can cook it fresh

Directions

  1. Cook your Pumpkin for 15 mins on the air fryer after dicing with some herbs, onion powder, garlic, paprika, Italian herbs

  2. Cook your cous cous as per the instructions

  3. Dice up your veg & chop your spinach up

  4. Fluff up your cous cous and transfer to a larger bowl & add all your veg/salad, pinenuts and cruble in your fetta leaving a little bit for the top & give it a good mix

  5. Add your chicken, the rest of the fetta and your dressing on top. You can add as much as you like but my tip is add a bit and mix then add more if needed. You can also squeeze a little lemon 🍋 on too
