Easy Chocolate Chip Pikelets

These pikelets will become your new family favourite to have on the weekends for a lazy Sunday or left over for school lunches
Ingredients

1 Cup Self Raising Flour
-
1 Egg lightly beaten
-
3/4 Cup Milk
-
1/4 Cup Choc Chips
Directions
Sift flour into a bowl
Beat egg slightly to break it up
Slowly pour in your milk and egg into the flour whilst whisking as you pour. This gives you a nice smooth batter if you mix and pour at the same time and is a great one for the kids to help with
Once combined and smooth add your choc chips and give them a mix around to mix through your batter
Add a little bit of butter Into your pan on a low-medium heat. You don’t want the pan too hot as it will burn your pikelets
Scoop approx. a tablespoon of batter into your pan into a circle shape. Don’t worry if they aren’t perfect
Cook until you start to see bubbles popping on top and flip it over and brown the opposite side. It should only take a couple of minutes each side
Repeat until a pikelets are cooked
Serve immediately. You can top with fruit maple syrup, some chocolate sauce or eat them as is. This makes approx. 10 if you want more just double the recipe

Recipe Note
- A delicious breaky or snack option, you can switch up the choc chips with blueberries for something different if you like
- This makes about 10 but just double the recipe if you wanted more of them
