A fun and colourful Christmas fruit platter made using festive cookie cutter shapes for a quick but impressive holiday breakfast, snack, or dessert. This one is also great because you can use what is in season and everyone's favourites.
Ingredients

1 x Pineapple

¼ of a Watermelon

1 Punnet of Strawberries

1 Punnet of Blueberries

1 Punnet of Blackberries

1 Punnet of Raspberries

1 Small punnet of Cherries
Directions
This one is super easy to prep. Simply grab a platter, I was taking this to a BBQ so I popped it into a cake container that had a flat base and a lid that goes over the top but you can also use platter with a lid or simply wrap in cling wrap if you need to take it or make it ahead
Slice a few cm thick pieces of watermelon and pineapple *see note 1
Using your cookie cutters I used mine from Bake it by Giovannellis with a tree cookie cutter and a mini gingerbread but you can use any shape. Cut a few pieces out of your fruit with your cookie cutter. With the watermelon save a couple of slices that have the cut out and add some blueberries in the centre of them. It’s another cute option that looks affective. Depending on the size of your platter you can also cut the extra pieces up too.
Cut some pineapple out as well with your shapes and arrange all of your fruit on the platter, we want it to look full. You can overlap and double things up with fruit platters and pop the cut out shapes on top too so you can see them and get the Christmas affect
That’s it once it is all cut serve and enjoy

FAQ & Notes:
- When cutting your slices of fruit don't cut them thicker that your cookie cutter thickness as it makes it hard to push the cookie cutter through. You actually want it a little bit thinner than the thickness of your cutter.
Q. Can I use any fruit?
A. Yep you sure can, you can use any fruit you like on the platter. Things that can be cut through are better for the cut outs. Like the watermelon, pineapple, rockmelon, apples even nectarines if you have a smaller cutter but one tip take the skin off first as it is easier to cut that way
Q. How long in advance can I make this?
A. You could make it the day before but personally I like to make it the morning of to make sure my fruit stays nice and fresh and doesn't go brown or mushy especially the cut up pieces. So my advice is make it the morning of. If you are going to an event (especially here in Australia with Christmas in Summer) I would recommend to keep it in the fridge until serving just again so it stays nice since you have cut up fruit. If you cut it the night before it will need to go in the fridge don't leave it out.
