Ingredients
-
π 2 x Puff Pastry Sheets (from freezer)
- π 1 small container about 135g of semi sundried tomatoes
- π 100g of spinach about 2 good handfuls
- π 180g of mozzarella
-
π 160g of halloumi
- π 1 Large Brown Onion
-
π 1 Small Tin 140g of tomato paste I use the Mutti Brand
-
π 1 big sprig of Rosemary
- π 1/2 tsp of italian herbs
- π 1/2 tsp of garlic powder
- π A squeeze of 1/2 a lemon
- π salt & pepper to taste
Directions
π Dice your onions and cook on a lower temp in your fry pan to brown off this takes about a good 15 minutes or so depending on the heat
- π Geate your cheeses, chop your spinach and tomatoes in small pieces and add all together in a bowl and add the onion once cooked and give it a mix
- π Pre heat your oven to 180c
- π take your pastry out of the freezer to dit for a min whille you Add the tom paste ans herbs in a bowl with a squeeze of lemon & salt & pepper and mix
- π Then spread the tom paste 1/2 on one 1/2 on the other all over the pastry sheet leaving a little gap at the end of rhe pastry, now add your filling half on one side and half on the other leave it the gap
- π then roll it up and cut into about 1.5cm - 2cm pieces using a sharp flat edge knife as it makes it easier
πGet your board or platter that your serving it on and place on the baking paper to get a guide on size. I used my knife to go around and make a little indentation not a big one but just a light mark to guide it
π Now place your pinwheels in circle shape to make the wreath placing them up next to each other and filling facing up
π Bake away in the oven for about 25- 30 mins these take a little longer because they are right next to each other so cook until golden brown, if you think they need a bit more you can cook them longer

Recipe Note
- The Halloumi and Cheese is one I took from my Gozleme Recipe and it works so well together.
- You could also serve this with something like a homus if you wanted to add some type of dip as well
- Be carful when you move it to your platter try to slide it on if you can so that it slides off nicely and doesn't break if it does come apart just pop it back together you shouldn't notice any bits that have come apart if you place it right next to each other again
