Christmas Pinwheel Wreath

Ingredients

  • πŸŽ„ 2 x Puff Pastry Sheets (from freezer)

  • πŸŽ„ 1 small container about 135g of semi sundried tomatoes
  • πŸŽ„ 100g of spinach about 2 good handfuls
  • πŸŽ„ 180g of mozzarella
  • πŸŽ„ 160g of halloumi

  • πŸŽ„ 1 Large Brown Onion
  • πŸŽ„ 1 Small Tin 140g of tomato paste I use the Mutti Brand

  • πŸŽ„ 1 big sprig of Rosemary

  • πŸŽ„ 1/2 tsp of italian herbs
  • πŸŽ„ 1/2 tsp of garlic powder
  • πŸŽ„ A squeeze of 1/2 a lemon
  • πŸŽ„ salt & pepper to taste

Directions

  1. πŸŽ„ Dice your onions and cook on a lower temp in your fry pan to brown off this takes about a good 15 minutes or so depending on the heat

  2. πŸŽ„ Geate your cheeses, chop your spinach and tomatoes in small pieces and add all together in a bowl and add the onion once cooked and give it a mix
  3. πŸŽ„ Pre heat your oven to 180c
  4. πŸŽ„ take your pastry out of the freezer to dit for a min whille you Add the tom paste ans herbs in a bowl with a squeeze of lemon & salt & pepper and mix
  5. πŸŽ„ Then spread the tom paste 1/2 on one 1/2 on the other all over the pastry sheet leaving a little gap at the end of rhe pastry, now add your filling half on one side and half on the other leave it the gap
  6. πŸŽ„ then roll it up and cut into about 1.5cm - 2cm pieces using a sharp flat edge knife as it makes it easier
  7. πŸŽ„Get your board or platter that your serving it on and place on the baking paper to get a guide on size. I used my knife to go around and make a little indentation not a big one but just a light mark to guide it

  8. πŸŽ„ Now place your pinwheels in circle shape to make the wreath placing them up next to each other and filling facing up

  9. πŸŽ„ Bake away in the oven for about 25- 30 mins these take a little longer because they are right next to each other so cook until golden brown, if you think they need a bit more you can cook them longer
