Cottage Cheese Bruschetta

This is an absolutely delicious option for breakfast or lunch and a bit of a twist on the bruschetta. I saw Laura Vitale make something like this for lunch and had to give it a go. I made mine for breakfast to switch up what I was having for breaky. I also forgot to get basil but it still tasted delicious.

This is such a delicious twist on a breakfast or even lunch option when you want something easy and delicious 

Cottage Cheese Bruschetta

Ingredients

  • 1 Tablespoon Cottage Cheese (I use onion and chives one)

  • 1/4 Red Onion diced small 

  • 4-5 Cherry Tomatoes or 1 bigger tomato

  • 5 Basil Leaves 

  • 1 Tsp of Balsamic Vinegar 

  • A pinch of Oregano Leaves Dried 

  • Salt and Pepper to Taste 

  • 1 Piece of your favourite Toast I used Sourdough 

Directions

  1. Pop your bread on to toast to your liking

  2. Dice up your red onion into small pieces 

  3. Chop your tomato into small pieces as well and pop these together in a bowl with your basil

  4. Add balsamic vinegar I don't technically measure this I just free pour about 1 tsp, add your dried oregano salt & pepper to taste & mix well

  5. Add a layer of cottage cheese to your bread, I add a good layer to cover the bottom of the bread, I also use the onion and chive version in Australia but you can use plain as well

  6. Top with the tomato mix, any left over balsamic in your bowl drizzle over the top and serve immediately
