Such an easy and delicious toastie sandwich to make for lunch!
Ingredients

🥪 2 pieces of sourdough bread* Note 1
-
🥪 1 100g Piece of chicken thigh
-
1 Egg for crumbing your Chicken *Note 2

🥪 50g of Bread Crumbs *Note 2

🥪 Seasoning for crumbs I used approx. 1 tsp parmigiano cheese, 1/8 tsp onion powder, 1/8 Tsp garlic powder & ¼ tsp Italian herbs. You can cheat and buy pre-crumbed chicken* Note 3

🥪 A handful of Rocket (Arugula)

🥪 Garlic Sauce* Note 4

🥪 1 Slice of Tasty or cheddar cheese* Note 5

🥪 ½ An avocado

🥪 A good dash of salt & pepper

🥪 1 tbsp of Butter for bread

🥪 Approx. 2 Tsp of Olive Oil for the Cooking Chicken
Directions
🥪 Flatten your chicken if it’s quite thick (*see Note 6), then coat it in your egg wash then crumb/herb mixture.
🥪 Cook the chicken for about 5–7 minutes per side, or until cooked through, this will depend on the size of your chicken.
- 🥪 Once cooked, butter the two sides of your bread that will be on the outside of the toastie.
🥪 Spread garlic sauce or mayo on the inside of both slices of bread. Add avocado on one side, as much or as little as you like.
- 🥪 Add the cheese to the non-avocado side, then layer the cooked chicken and rocket on top. Season with salt and pepper to taste, then place the other slice of bread on top.
🥪 Heat your frypan over a lower-medium heat (*see Note 7), then place your sandwich in the pan, buttered sides down. It doesn’t matter which side you start with, as you’ll be flipping it. Cook for about 5 minutes per side, not too hot or it will burn. Flip once golden, and cook the other side.
- 🥪 Once it’s beautifully golden brown and the cheese has melted, serve and enjoy right away.

FAQs & Notes:
- Use whichever sourdough or bread you like, if you only have a normal sandwich loaf of bread you can use this as well. It is personal preference to what you use.
- We use approx. 25g of bread crumbs for this but I honestly don't measure I just pour a bit out and coat my chicken. I usually use a egg wash that I dip the chicken into before coating but you can coat chicken without eggwash, just simply dip your chicken in and press lightly to coat
- The seasoning for this you can use whatever you like, again I don't usually measure but if you are only making 1 serve I would use about 1/8 of a tsp of onion powder and garlic powder so it isn't too overpowering,
- Garlic Sauce is available from most supermarkets, I had some left over from a Lebanese takeout the night before, it may be called garlic dip as well. But if you don't like this or can't find it you can use mayonnaise too
- I use a Cheddar that I slice myself but you can use a pre-sliced version or any cheese you like but you just want to make sure it is enough to cover your bread so this will depend on your size of bread to how much you need. Don't slice it too thick though as it will be hard to melt.
- You want to flatten your chicken thigh or breast depending what you are using as you don't want it too thick while cooking. I like to flatten it out to be a similar size all over so it cooks easily and doesn't burn with the crumb. I also don't deep fry mine but you are welcome too if you prefer
- When cooking a toasted sandwich or grilled cheese you always want to cook it on a low/medium temperature so that it doesn't burn. We cant it to cook, go golden and melt our cheese not overheat and burn right away. So cooking lower and slower still gives us a beautiful golden outside while melting our cheese
*When constructing a toasted sandwich or grilled cheese I always like to pop the cheese I like to pop it closest to the edge not in the middle of the sandwich so it is closer to the heat and cooks through well
