Don't throw out those potato skins! If you have never tried baking or air-frying up your potato skins then you really need too. They are absolutely delicious, crispy, crunchy delicious potatoes and saves something that would otherwise end up in the bin!

You have to try these they are absolutely delicious and so simple to make
Ingredients

Left over Potato skins from your potatoes
-
Herbs of your choice I always use Garlic (fresh minced or powder), paprika, onion powder and either oregano or rosemary

Olive Oil

Salt and Pepper to taste
Directions
Pre-heat your oven to 180c
Once you have washed & peeled your potatoes pop the skins in a bowl & Coat in olive oil and your fav spices I have listed mine above in the ingredients. I don't ever measure this I just pop some on top
Then spread out on a baking tray with baking paper, spread them out so they aren't overlapping
Cook for about 25 mins or until golden brown and crispy, this will depend on how thick or big the skins are. But watch these ones as they cook. I always check mine after 10-15 mins as they can go from cooked to burnt and if you slice your skins quite thin they will not take long at all
Take them out and add some salt & pepper to taste and eat right away, as they are small they are best eaten fresh so they don't cool down too much

Recipe Note
- Keep your eyes on these as they are cooking as they can burn if you leave them too long
- You can even freeze these if you don't want to eat them at the same time as the potatoes and simply cook them when you feel like it. They would be a great snack too
