This recipe was a take on the crispy rice paper spanakopita's reels, once I saw them I knew I had to make a delicious breakfast version. It is a perfect breakfast or brunch especially for the weekends when you want something a little extra. And having it air-fried makes it crispy and delicious.
Ingredients

🤎 2 Rice Paper Roll Sheets
- 🤎 1 piece of bacon rasher diced up
- 🤎 1/4 of a brown onion diced

🤎 2 Eggs lightly whisked + 1 for egg wash
- 🤎 4-5 Mushroom Cups
- 🤎 Small handful of spinach approx 1/4 cup

🤎 1-2 Cloves of garlic crushed *See note 1
- 🤎 Salt & Pepper to taste

🤎 1/2 tbsp of butter (for mushrooms)
- 🤎 1/2 tsp of olive oil for cooking
- 🤎 1/4 tsp paprika
- 🤎 1/2 tsp oregano for seasoning
Directions
🤎 Cook on medium heat your mushrooms & onions with the oregano in the frypan, cook for about 3 mins till water evaporates from the mushrooms then add the butter and garlic, and cook for another 3 mins till the butter is absorbed. Remove from the pan and set aside
🤎 In the same pan add the bacon and cook till crispy & again set aside. You do not need oil to cook this so don’t add any in your bacon should produce the oil itself. *Note 2
🤎 Whisk your 2 eggs and paprika & add to the same pan with a bit of oil (don’t need to wipe it down but can if you need too) add the spinach broken up on top and move around to make scrambled eggs. You want to cook till just nearly cooked as they will keep cooking in the air-fryer. This only takes a minute or 2 to cook.
🤎 Dip your rice paper rolls in warm water (don’t soak them only dip). Place them flat on your board or bench overlapping the middle. Working quickly add the egg, mushrooms & onions mix, bacon and salt & pepper to one long edge *Note 3
- 🤎 Roll into a long tube and then roll into itself to make a scroll
🤎 Add egg wash all over and sesame seeds if adding them, then into the air-fryer for 15-20mins on 200°C (you can do it in the oven too) the cooking time will depend on the size etc so check it after 15 minutes

FAQ's and Notes:
- You can switch up the flavours in this to your fav, I added 2 cloves of garlic but if you like garlic but not too much just add 1
- If your pan is sticking with your bacon too much you can add a dash of oil to it if needed. I never add oil for bacon though as it produces enough as it cooks you don't need to add more otherwise it gets too oily.
- Do not soak your rice paper rolls as they will become way to soft and when you go to roll them they will fall apart.
Q. I have seen people dip the whole rice paper roll into egg?
A. I have seen this too but personally I like to just add it as an egg wash on the outside. We are only using it to make them go nice and crispy and golden, so I don't think it needs to be the whole way through. If it is then you need to make sure the egg is cooked in the middle too, it can also make the rice paper rolls go too soft and sticky which we don't want and that can make it harder to work with. Everyone is different in what they prefer to use but dipping it in water and using the egg wash is my preferred way.
Q. Can I change the ingredients or herbs?
A. Go for it, you can make this whatever flavour or style you like. If you prefer more of a spicy version you can do that or if you want to make more Asian flavours you can too. Plus you can add any of your favourites in the middle as well, think about what you love in a good omelet and add that it. And have fun with it!
