If you’ve ever overbaked, underbaked, or had a cake collapse as you took it out of the oven, this one’s for you. This cupcake trifle is my go-to way to save baking fails from going in the bin. By layering broken cupcakes, cakes or brownies with cream, flavourings and fruit, you can turn almost any “fail” into something impressive that no one will ever guess started out wrong. It’s practical, adaptable, and one of those recipes you’ll be very glad to have up your sleeve.

A simple layered trifle made from leftover or failed cupcakes, cakes or brownies. Creamy, balanced and perfect for rescuing baking mishaps without waste.
Ingredients
-
Small Container of Thickened or Whipping Cream
-
About 2 Cupcakes
-
Small Punnet of Raspberries
-
1-2 Tbsp of Pistachio Spread
-
1 Tsp of Pistachio Crushed up
Directions
Whip up some thickened cream (you can use custard too). I didn’t add vanilla or sugar because I was adding the cupcakes plus pistachio papi cream, which is already sweet.
Get a glass or ramekin. Break up your cupcake or cake and pop it on the bottom. Add a few tablespoons of cream and some pistachio paste (I heat it for 10 seconds in the microwave so it’s easier to work with).
Add a couple of broken raspberries, then repeat the layers. I only did two layers, then finished with whole raspberries, chopped pistachios, and a little extra pistachio paste on top.
