Delicious Slow Cooker Vegetable Soup

This is light, full of delicious flavour but till filling and the perfect winter warmer or comfort bowl of soup on those cold winter days. Pop it in the slow cooker in the morning and come home to a delicious smelling house at the end of the day

Ingredients
- 1 Brown onion diced
-
1-2 tsp of olive oil to cook onions
-
4-5 garlic cloves minced
-
2 celery sticks finely chopped
-
2 carrots finely chopped
-
2 zucchini chopped into 1/4 pieces
-
A handful of green beans top & tailed and diced into 1-2cm pieces
-
2 tsp of italian herbs
-
2 Liters of Vegetable Stock
-
2 x 400g cannellini beans drained and rinsed
-
1-2 decent handfuls of kales rinsed and chopped
-
1 parmigiano rind approx. 5cm
-
2 sprigs of rosemary
-
2 bay leaves
-
2 Tbs of Tomato Paste
-
1/2 lemon
-
Salt & Pepper to taste
Directions
Add some oil and your diced onion with minced garlic into your slow cooker on sauté, use your frypan if your slow cooker doesn’t have sauté option, cook for a few minutes to soften while you chop your carrot & celery. Sauté on high in slow cooker but medium on stovetop. We want colour not burnt
Add celery & carrot into onion and continue to sauté, add some oil if needed and add the Italian herbs. Sauté for a good 10 minutes. Turn off sauté
Add remaining veggies, stock, beans, parmigiano, tomato paste, remaining herbs, lemon & with a good dash of salt & pepper into the slow cooker. Give it a really good mix around and pop on to slow cook for 6 hours on high slow cook (i have the @philipshomelivinganz all in one cooker)
Once it is done give it a good stir and you can add a dash more lemon or salt & pepper if needed. Otherwise enjoy

Recipe Note
- Cooking off our celery, onion and carrot adds such a great flavour to this dish so don't skip this step
- You can switch up the veggies as well if you like and if you don't like kale in your soups just swap it for another veg you do like, just make sure you don't add too much as there is enough liquid for the ingredients we have listed
- If your slow cooker doesn't have the sauté option then you can do that in a fry pan and transfer to the slow cooker just make sure you get all the goodness out of the pan too.
