One of my new favourite easy dinners to make and the best part you can switch it up and add whatever you like in here to use up any veggies
Ingredients

600g chicken thigh
-
1 chorizo approx. 100g
-
1 brown onion diced
-
200g Arborio rice
-
500ml Chicken Stock
-
1 Cup Frozen or Fresh Peas
-
1 x Beerenberg Chicken & Chorizo Paella Meal Base*

Optional 1 red capsicum, coriander or parsley for topping & lemon 🍋
Directions
Heat 2 tablespoons olive oil in pan. Add diced onion and start to brown off, then add the diced capsicum & chorizo. I let mine brown a little first so the onions can get a little colour too. Then add the diced chicken to brown off
Add uncooked rice & give it a mix around in the pan before adding the next ingredients
Add your jar of sauce, add a little stock to rinse out jar and add that to the pan as well as the remaining stock
Cover and simmer for about 20 mins then add the peas, stir and cook for another 5 minutes
Remove from the heat and serve with a slice of lemon and some parsley (i used coriander since I didn’t have any and thought it was delicious)

Recipe Note
- Use your favourite chorizo for this one there is all different kinds, I just got a spanish chorizo from my local fruit shop but there is mild & spicy etc so just have a look when your buying it and pick what you like
- Beerenberg Farm has a range of meal bases and this one is delicious you can usually pick this up at local fruit shops, Harris Farm or some woolworths in Australia stock these as well.
