Ingredients

2 Arnott’s Salada Biscuits
-
2 Eggs Boiled
-
1 Tsp Dill chopped
-
1 Tsp Chives chopped

1 Tbsp Mayonnaise

1 Tsp Mustard (*see note 1)

Approx. 40g Rocket or one handful

Salt & Pepper to taste
Directions
Boil your eggs for about 10-12 until they are fully cooked and leave them to cool (this can be done in advance see notes below)
Once cooled mash them with a fork in a bowl and add the dill, chives, mayonnaise, mustard, salt and pepper and give it a good mix
Add the egg mix onto the Arnott’s Saladas and top with your rocket
And enjoy, serve right away

Notes & FAQ's
- I used Dijon mustard for this but you can also use a normal yellow mustard if that is all you have
- You can make the eggs in advance for this one and store them in the fridge for about 6-7 days so you can make them at the start of the week for easy lunch options
Q. Can I use a different dressing?
A. Yes of course use anything you like, if there is something you like to have with your egg sandwiches go for it
Q. Do I have to use rocket I don't like it
A. Nope you can use spinach or just regular lettuce. I like the pepperiness of the rocket but any of the lettuce like salad ingredients will work
