I love using the Nando's Peri Peri sauces to coat chicken, it is such a simple way to switch up a dish and is packed full of flavour. And using it to make this simple wrap is perfect for busy weeknights or a quick Friday Fakeaway option just add some delicious Hot Chippies on the side and you have your own homemade fakeaway meal

Ingredients

Approx. 3-4 Tbsp of Nandos Peri Peri Marinade *See note 1

2 Pieces of Chicken Thigh Approx. 250-300g *See note 2

½ Small Capsicum Sliced
-
½ Red Onion Sliced
-
100g of Tzatziki
-
1 Tomato Sliced
-
3-4 Lettuce Leaves Chopped
-
2 Tbsp of Jalapenos (optional) *See note 3
-
2 Sprigs of Coriander (Optional) *See note 4

Salt and Pepper to Taste

2 Wraps of your choice I use Simsons Pantry Wholemeal Wraps approx.45g each

1-2 Tsp of Olive Oil for cooking
Directions
If your Chicken thigh is quite thick flatten it out and then add your Nandos Peri Peri Marinade to your Chicken thighs leave for a few hours to marinate in the fridge covered if possible. If you don’t have time you can marinate and cook right away.
Preheat your pan to a medium heat with olive oil. Cook your chicken in your pan on a medium heat for about 5-7minutes per side or until chicken is cooked through completely, please be careful as the marinade can splash so if you have cover for your pan pop it on* See note 5
Slice your capsicum and add in about ½ way through to give it some colour, you can use a few mixed baby capsicums too *see Note 6
While this is cooking slice your salad ingredients up to get them ready and get your wraps out
When the chicken is pretty much cook heat up your wraps, I like to heat mine up in a pan with No oil it doesn’t need it and only takes about 10 seconds per side, otherwise you can heat it in the microwave too but the pan does taste better
When everything is ready and your Tzatziki to your wraps all over the bottom then add the chicken I like to slice mine to make it easier to eat leaving a small gap at the bottom of the wrap so you can fold it. Then add on the salad the tomato, red onion, jalapeños if using, lettuce and coriander too.
If you like you can also add mayo etc to this wrap
Wrap it up and serve right away

Notes & FAQ's
- You can use any of the Nandos range for this recipe and also the measurement is just a guide you just want to pour enough so your chicken is coated and can marinade
- The amount of chicken you need depends on your wrap sizes if your wraps are very small you won't use as much but if they are bigger you may need more. 150g is usually plenty for a wrap per person. If your chicken is only 100g it is ok you can still make the wrap
- The Jalapenos are optional on this dish if you don't like spice or the extra spice just leave them off
- Same for the Coriander I know a lot of people don't like it so if this is you just leave it off
- I do find the marinades from Nandos can splatter quite a bit when you cook them so be careful and you can cover your pan if needed. You can also cook it in the oven if you prefer too
- You can leave the capsicum fresh if you like I cooked mine to give it a bit of extra flavour. I also used a few baby capsicums in mixed colours as I had some in the fridge. If you have a mix of colours of capsicum use a bit of each one
Can I switch out Tzatziki?
Yep you sure can customise this how you like. You could use a mayonnaise or a humus etc too that would be delicious
Can I use any flavour of the Nandos?
Yep use whichever you like sometimes I will use the lemon and herb instead
Where can I get the Marinade?
You can usually pick this up at your local supermarket but if they don't have it you can use any peri peri marinade for this
