Ingredients

2.5 Cups of pasta of your choice

1/2 red capsicum diced

6 Cherry Tomatoes diced

1/2 Carrot Gratted
-
1/2 Cucumber Diced

100g Fetta cubed

1 cup spinach chopped

100g Beerenberg ranch dressing you can switch this for mayo if you prefer

Squeeze of lemon
-
Salt & pepper to taste
Directions
Cook your pasta as per the instructions on the packet, drain it & let it cool. I ran mine under cold water to speed up the process a bit. You don’t want it super hot when adding everything else in
Chop all your salad ingredients up, grate your carrot and chop your fetta
Add cooled pasta, salad ingredients, veggies, ranch, lemon, salt & pepper into a bowl and give it a good mix around to coat all the pasta & salad. You can add more dressing if you like too especially if you want it more creamy
Add some chicken, beans, boiled eggs or tuna whatever protein you like to make it more filling

- Pasta salad always tastes better the next day after it has been in the fridge a while so make this a day ahead and let those flavours develop overnight
- This is a great option for lunchboxes when you want something a little different or to use for a side dish at your next bbq
- If you don't like ranch you can use mayo as well, even a yogurt with some siracha would be delicious
- Cooking time will depend on the pasta you use.
