Looking for a sandwich free lunch options, this is a great easy recipe that you can use in your luncboxes but also for your picnics, as a side for dinner or lunch and you can add different proteins to make it more filling and switch up the flavours. I have some different options of what you can add below. It also tastes even better the next day or 2 after sitting in the fridge

This potato salad is absolutely delicious, easy to make and one the whole family will love
Ingredients

1 kg potatoes
-
1 Medium Dill Pickle chopped small
-
1/2 cup sour cream
-
1/4 cup mayo
-
1/2 Lemon squeeze
-
1 Tbs Dijon Mustard
-
Dill approx. 2 sprigs chopped
-
Chives approx. 8 -10 chopped small chopped
-
Salt & Pepper to taste
Directions
Peel and chop potatoes into small cubes, add to a pot of cold water not hot and then bring to a boil and reduce to a simmer. Cook until you can just pierce the potatoes about 8-10 mins if they are tiny they may only take 5 mins so check after about 5 mins. Drain and rinse in cold water and leave to cool. You don't want to overcook them
Cook your Bacon, I like it crispy but cook to your liking, drain on a paper towel and leave to cool. You can cook it as a whole piece or chop it into pieces first.
Add cream, mayo, mustard, pickle, dill, chives, lemon in a bowl and mix well add a little dash of salt & pepper
Chop your cooled bacon into small pieces, add to your cooled potatoes, and dressing & mix until all combined
You can eat right away or leave it in the fridge. This one tastes even better the next couple of days so it's perfect to make the day before for lunch or your event.

Recipe Note
- Don't overcook your potatoes you only need them to be just softIf you don't like pickles you can take them out, they do add a nice crunch though and flavour but you can also add celery for crunch too
- You can add lots of different proteins for this one to make it more filling, some examples are below Boiled eggs, Tuna, Shredded Chicken you can even do a quick version of a pre-cooked Bbq chicken from the supermarket or chicken shop, Tofu etc
