I had a picture in my head of what I wanted wit these Fish Tacos and this exceeded those expectations. This has to be one of my favourite new recipes I have created in a while, and one you have to try. This is the recipe for 1 person if you are eating 2 tacos yourself but easily double, triple it etc for more.

These are so delicious! You have to give them a go they are definately worth making
Ingredients
Fish

1 piece of fish - Approx. 100g

Herbs of choice I used garlic powder, onion powder, paprika & oregano
Tacos and Filling
-
2 soft shell tacos
-
4 Perino or cherry tomatoes, 1 big tomato will work as well
-
A small handful of coriander
-
About 5 jalapeños slices (optional)
-
1/4 of a red onion diced
-
1/2 lime
-
3 Tablespoons of greek yogurt or sour cream
-
2 - 3 Tsp of Siracha i use Marions Kitchen Coconut Siracha

4 Slices of avocado
-
Sliced cabbage about 50g
Directions
Pat your fish dry especially if you defrosted it as it will have excess water
Sprinkle your herbs over your fish on both sides and spray with olive oil. I actually coat and spray one side then put that coating side down on the tray (with the air-fryer off) and then carefully add the herbs and oil to coat the other side. Cook in the air-fryer for about 15 mins or until cooked and golden brown (you can use a fry pan or oven too)
While that's cooking mix your siracha, yogurt and a squeeze of lime together
Slice your cabbage and pop into the sauce mixture, give it a good mix to make sure its all coated.
Cut your jalapeños if adding, tomatoes, red onion and coriander up into small pieces and mix together, pop some salt on top
Once the fish is done chop it into pieces carefully as it will be hot
Heat up 2 soft tacos in a dry pan with no oil for a few seconds each side or in the microwave
And assemble, cabbage in the sauce on the bottom, fish, pico de gallo (tomato mixture), avo and a squeeze of lime juice. You can add some sauce from the cabbage on top too if you like. Serve and eat right away

Recipe Note
- This is a great family meal, you can easily take the chili out and add some cucumber, swap the siracha for even a sweet chili sauce
- You can switch the yogurt to sour cream if you prefer that instead If you have left over cabbage and sauce mixture you can keep it and use it on some bao buns, chicken burgers or just add it as a side to your meals
- This is for 1 serve with 2 tacos but if you want more simply double or tiple etc the recipe
- There is no coating on the fish but it comes out golden brown, you can coat it if you like and you can also switch up the herbs as well
