There is lots of wonderful recipes for scones and everyone has their fav, some add buttermilk, lemonade or lemon. This is the basic recipe of how I make my scones I have tried a few different options but I always come back to the classic. It's a delicious afternoon or morning tea option with some jam and cream

Easy Delicious Scones

Ingredients

  • 350g Self Raising Flour

  • 80g Butter Chopped

  • 45g Caster Sugar

  • 180g Milk

  • 1 Tsp Vanilla Essence

  • 1 Egg for Egg Wash

  • Extra Flour for Dusting

Directions

  1. Pre-Heat oven to 200°C

  2. Cut your butter into small cubes and add into the flour. Rub together with your fingers until it's incorporated and looks a bit like sand. Just like our shortbread does

  3. Add in your sugar and mix well, I just did this with my hands since we are using them already

  4. Make a well in the center of the flour, add your milk and vanilla in and mix with a butter knife right away, don't let it sit in there without mixing

  5. Mix it till it's incorporated, it doesn't take long and if you find you have some crumbs at the bottom not mixing in just use your hands to mix it all together lightly

  6. Pop your scones mixture onto your floured bench and knead or fold it over about 10-12 times. Nice and gently though you aren't pushing it hard to knead we just want it to be a bit smoother

  7. Roll out lightly with a floured rolling pin, again don't push hard just lightly push it out. Roll to about 1-2cm thickness

  8. Use a circle cutter about 6-7.5cm big, I dipped mine in flour so it doesn't stick and push straight down to cut your 8 scones. You may need re-knead and roll the last couple out

  9. Pop your cut scones onto a tray with baking paper leaving a couple of cm in-between each one

  10. Whisk your egg with a fork to make your egg wash and cover the top of each with a light covering of egg wash.

  11. Bake for 10 mins until golden brown Enjoy fresh from the oven with your favourite jam and cream
