This is my favourite go to lunch that I absolutely love!
Ingredients
-
1 can of tuna drained
-
Salad 6 x cherry tomatoes
-
¼-½ Cucumber cucumber,
-
¼ Red Onion
-
2 Lettuce Leaves
-
½ Capsicum
-
2 Tablespoons of Tamara Valley Greek Yogurt
-
1.5 Tsp of Marion’s Kitchen Coconut siracha
-
Squeeze of lemon
-
A couple of sprigs of coriander
-
1 Simsons Pantry Wrap
Oilive oil spray
A dash of Paprika, Garlic Powder and Italian Seasoning
Directions
For the Chips
Preheat oven to 180c
Chop 1 Simsons Pantry wrap into triangles or wrap of your choice coat with olive oil, I think the spray is best
Add some herbs I did Italian seasonings, paprika & garlic
Pop flat onto a lined tray and bake for about 5 minutes until crispy and take out to cool
Tuna Salad
Chop all your veggies into small pieces
Add in a bowl with your tuna, then add the yogurt, siracha and lemon and give it a good mix around and serve

Recipe Note
- You can use mayo for this if you don't like yogurt or chili
- You can use store-bought corn chips if you don't have time to make your own, there is loads of brands out there now and some that are just more salt flavoured which would go great
- Feel free to switch up the salad as well to whatever you have or like
