Egg Sandwiches are such an underrated sandwiches, they are absolutely delicious and so simple to make as well!
Ingredients

4 Boiled Eggs
-
4 Pieces of your favourite fresh bread
-
Approx. 2 Tbsp of your favourite Aioli or Mayonnaise

4 Pieces of lettuce
-
Salt & Pepper to taste

1 Tsp Of Fresh Dill

1 Tsp of Chives
Directions
🥪 Boil 2 eggs for about 10 minutes until cooked, you can do this in advance as well and pop them in the fridge
- 🥪 Peel and mash both eggs, i prefer them once they cool not warm
🥪 Chop your dill, chives and add to your eggs
🥪 Add a good squeeze of mayo or aioli whichever is your fav and give it a good mix
- 🥪 Grab your sandwich bread and add a little bit of aioli on the inside of the bread. You can do butter too i just prefer to use what I did in the egg
- 🥪 spread your egg evenly across and add your lettuce, cut into your fav shape and enjoy ☺️

- You can make the eggs in advance for this one and pop it in the fridge ready to use which makes this an even quicker option
- You can add more or less of the mayo/aioli if you like and you can even add things like ranch etc if you like those flavours
- You really do need fresh soft bread for these it makes a big difference
