This Greek-style fish saganaki is simmered in a rich tomato sauce with herbs and feta, served with crispy potatoes, garlicy green beans, and golden garlic bread. A perfect meat-free meal for Good Friday or any easy seafood dinner.

Fish Saganaki is one of my favourite ways to make fish, it is much easier to make then you may think. But it is also a great recipe for Good Friday if you are not eating meat. But it is also a great option for a lunch or dinner. I originally found this recipe on Taste but switched it up a little and it is a delicious dish
Ingredients
Fish Saganaki

4 Garlic Cloves Minced

1 Red Onion Diced

800g tinned tomatoes*
-
1 Tsp Oregano
-
2 Sprigs of Rosemary Chopped
-
½ Lemon Juiced
-
100g fetta
-
1 Tbsp Flat Leaf or Curly Parsley Chopped

600g White Fish (I use Basa Fillets)*

1 Tbsp of Olive Oil
-
Salt and Pepper to taste
Green Beans

Green Beans Topped and Tailed
-
2-3 Garlic Cloves Minced

1 Tsp Of Olive Oil

Salt & pepper to tast
Crispy Potatoes
- 5 Potatoes peeled and chopped into quarters
- Herbs of your choice I always use approx. 2 Garlic Cloves Minced or 1 tsp of Garlic Powder
- ½ Tsp paprika
- ½ Tsp onion powder
- Either ½ Tsp oregano or rosemary

2 Tbsp of Olive Oil

Salt and Pepper to taste

1 x Garlic Bread Roll*
Directions
Potatoes Directions
Bring a pot of water to the boil and preheat your oven to 180°C
- Peel your potatoes and chop into quarters and add carefully into the boiling water. Boil for about 15 minutes or until just soft. Check them after 10 minutes to see as this will depend on the size of your potatoes. We want them just soft but not falling apart, if at 10 minutes they are done take them off
- Once soft drain the potatoes and use you colander (strainer) to shake them around either over the sink or the pot so you don't get water everywhere. This creates the fluffy outsides which make them super crispy
- Coat in some oil and your fav herbs and onto a baking tray
- Cook away for about 1 Hour or until they are nice and golden crispy brown turning half way through
Once cooked add some salt and pepper & serve
Fish Saganaki
Dice your onions into small pieces and add to a pan on medium heat with a dash of olive & the minced garlic. Slowly cook this for about 5 minutes to soften and get a slight colour. We want it a little brown but not too much
Once done add in your tin tomatoes*, add your oregano, rosemary, lemon juice, a dash of salt and pepper and give it a good mix. Bring it to the boil and reduce the heat to a simmer. Simmer for about 10-15 minutes until the sauce starts to thicken
Once the sauce has thickened a bit add in your white fish into the sauce and nestle it down a bit so the sauce is surrounding the fish & covered lightly. It doesn’t need to be perfect just pop them in one layer not overlapping. Cook away for about 8-10 minutes or until it is cooked through this will depend on your fish though*
Once cooked, sprinkle your fetta & parsley on top* and serve with your sides
Green Beans
Top and tail your green beans
Add to a pan on medium heat with your crushed garlic and approx. 1 tsp of olive oil and cook for a few minutes
Add about ¼ cup of water to your pan and cover to steam away for about 5-6 minutes
Once all the water is gone and the green beans are cooked to your liking you can remove them and serve with a dash of salt & pepper

Cook your Garlic Bread as per the instructions on the pack

Expert Tips, Variations & FAQ's:
- *For tinned tomatoes if you can buy the whole ones not already diced as they have better flavour and then chop them yourself. Simply use some kitchen scissors and chop in the tin
- *Use any white fish you like with this, I have some frozen Basa Fillets that I use that aren't too thick which works well in this as the thicker they are the longer they take to cook. My fillets were about 150g each.
- The cooking time of the fish will depend on the fish that you have
- *I only had curly parsley when I made this which works perfectly fine, you can also use coriander or leave it off if you don't like it
- * You can make a garlic bread from scratch or you can buy a pre-made one there is some great options at the supermarkets now too. Full Garlic Bread Recipe Coming Soon. If you also just prefer some fresh crusty bread you can use that too.
- You can add Chili to this for a spicier version
- Switch up the flavours by doing some basil as well
- You can switch the oregano for Italian Herbs
- You can change the sides for this one if you don't like green beans you can switch for broccolini, even some peas, corn on the cob, or even some roasted veggies if you prefer that flavour
