This flavour packed easy dinner is absolutely delicious and one of my current food obsessions. I took my Greek Style Lemon & Oregano Chicken switched it up a little and added it to a wrap with delicious garlic sauce and pickles to give it a twist and the flavours work so well together 

Greek Style Chicken & Vegetable Wrap

Ingredients

    • 2 -3 pieces of chicken thigh
    • 6 garlic cloves crushed
    • 1 tbs spoon of dried oregano
    • 2 tbsp of olive oil
    • 1-2 sprigs of rosemary
    • 3 lemons 🍋
    • 3-4 potatoes
    • 1 carrot
    • 2 zucchinis
    • 1/4 of a pumpkin
    • 1 Red Onion
    • 1/2 red capsicum

    • 🌯 3-4 wraps of your choice warmed up

    • 🌯 1 tbsp of garlic sauce per wrap*

    • 🌯 About 4o 1/4 pickles cut into ¼s*

    Directions

    1. 🌯 Preheat oven to 180c
    2. 🌯Mix your crushed garlic, oregano, oil, juice of your lemons & rosemary together and put aside (don’t throw the lemons skins out)

    3. 🌯 Cut your veggies into pieces about 1/4 pieces and add to a tray, cover with about 1/2 the marinade mixture & give it a good mix

    4. 🌯 Add your chicken and add the marinade all over the chicken and remaining on veggies
    5. 🌯 Cook in the oven for about 45 mins - 1 hour until veggies & chicken is cooked. If your veggies need more time take the chicken out & pop under some foil & keep cooking the veggies. I like mine to get a nice roasty toasty browning on top but this depends on your oven

    6. 🌯 Warm your wrap in a dry pan, it only takes a about 5-10 seconds each side, you just want to lightly warm it not cook it as it will go hard.

    7. 🌯 Chop the chicken up, add garlic sauce & then chicken, veggies & pickles & wrap it up to enjoy
