Ham, Cheese & Tomato Scrolls – Easy Snack or Lunchbox Favourite

These ham, cheese and tomato scrolls are a fun twist on the classic sandwich combo, baked into soft, cheesy swirls. Perfect for lunchboxes, afternoon snacks or weekend baking, they’re freezer-friendly and ideal for making ahead. Great for kids and adults alike, and so easy to customise!

Such a great lunchbox snack and freezer friendly too 

Ingredients

  • 2 Tablespoons of tomato paste with your chosen herbs, I used a tiny amount of garlic powder, onion powder, oregano & a little bit of chili (take the chili out for kiddies if they don’t eat it) and a little squeeze of lemon

  • 1 Slice of Chopped up ham, if it is small use 2

  •  Approx 1/4 Cup of Grated Cheese I grate my own cheddar (I don't usually measure I just add it on) 

  • 1 Piece of Frozen Puff Pastry 

  •  I also added in chopped up capsicum but chop it up nice and small so it doesn’t make them too bulky

Directions

  1. Take your puff pastry out of the freezer, it should defrost a little while you are cutting everything else up

  2. Add tomato paste and herbs and mix it together well

  3. Cut your ham, grate the cheese & cut up capsicum if adding

  4. Add the tomato paste first spread it all over just leaving a little edge, if using a knife just be careful you don't pierce the pastry, you can use a spoon if it is easier  

  5. Then add your ham, cheese and capsicum if using

  6. Roll it up nice and tightly, you can use the pastry sheet to help you

  7. Cut into pieces about 1-2cm thick with a sharp knife 

  8. Pop flat onto a baking tray 

  9. Bake at 180degrees for 15 minutes or until golden brown
