Ham, Cheese and Tomato is such a classic combo and making it into tasty scrolls is such a delicious way to switch up the classic and a perfect afternoon snack. They are freezer friendly too so you can make a big batch and freeze them up.

Such a great lunchbox snack and freezer friendly too
Ingredients
-
2 Tablespoons of tomato paste with your chosen herbs, I used a tiny amount of garlic powder, onion powder, oregano & a little bit of chili (take the chili out for kiddies if they donโt eat it) and a little squeeze of lemon

1 Slice of Chopped up ham, if it is small use 2

Approx 1/4 Cup of Grated Cheese I grate my own cheddar (I don't usually measure I just add it on)

1 Piece of Frozen Puff Pastry

I also added in chopped up capsicum but chop it up nice and small so it doesnโt make them too bulky
Directions
Take your puff pastry out of the freezer, it should defrost a little while you are cutting everything else up
Add tomato paste and herbs and mix it together well
Cut your ham, grate the cheese & cut up capsicum if adding
Add the tomato paste first spread it all over just leaving a little edge, if using a knife just be careful you don't pierce the pastry, you can use a spoon if it is easier
Then add your ham, cheese and capsicum if using
Roll it up nice and tightly, you can use the pastry sheet to help you
Cut into pieces about 1-2cm thick with a sharp knife
Pop flat onto a baking tray
Bake at 180degrees for 15 minutes or until golden brown

Recipe Note
- You could do a mix of cheddar, parmigiano and even pecorino if you like as well or add your favourite cheese
- If adding capsicum just make sure its cut up nice and small otherwise it will be too big when you roll up the pastry
- You can use any herbs you like in this and if you have kids that don't like herbs just take them out, you can add a little tomato sauce to the tomato paste
