These homemade LCM bars are a simple and fun no-bake snack made with 4 ingredients that you may already have as pantry staples. They taste even better than store-bought. These LCM Bars are a nostalgic classic snack from lunchboxes but they are actually so simple to make at home yourself that you don't need to but them from the store and you can customise them however you like! Great for kids and adult lunchboxes

Ingredients
- 🤎 85g of rice bubbles 2 & 3/4 cups
- 🤎 100g of marshmallows
- 🤎 20g of butter
- 🤎 1/4 tsp of vanilla essence
- 🤎 1 tbsp of chocolate chips (optional)
Directions
Add your chopped butter and marshmallows to a pot on a lower-medium heat on your stove top to melt them. Don’t let it get too hot or it can burn & mix continuously as you melt it. It will take about 3-5 minutes to melt completely. (See note 1*)
While its melting add the vanilla essence & continue to mix to combine
Once melted turn the heat off and add your rice bubbles to the pot & mix together well until they are all coated
Pop into a lined tray 20cm tray, line with a little butter first then baking paper on top to help it stick. Once you pop it in the tray push down to a even layer with your hands or the back or a spoon. Sprinkle your choc chips on top and leave for a few hours to set (See note 2)
Once cooled and set, cut with a sharp knife into pieces and store in an airtight container. You can either cut this into longer logs which you will get 10 or you can do like I have and cut into little squares and get 20

FAQ's and Notes:
- If you don't have mini marshmallows you can use bigger ones just chop them up a little to make them melt quicker and you may need to melt them a little longer to completely melt. You can also use coloured ones as well. Just use what you have available or can find.
- The choc chips I push a little into the bars so that they stick a bit better to the top
Q. How do I store these?
A. You can store these in an airtight container, they don't need to be refrigerated. They will last up to about 1-2 weeks but personally I like to make my version a smaller one and eat it within a few days rather than a bigger batch they last longer. I think they taste nicest when they are fresher. So I prefer to just make a fresh batch once it is finished
Q. Can I add what I like on top?
A. Yes, definitely you can add anything you like, you could do sprinkles, melted choc, sprinkles, nuts etc (depending on lunchbox rules) anything you like
Q. Can I add yogurt on top, just like the ones from the supermarket? (A q's from Tik Tok)
A. You would need to make a yogurt glaze to go on top with icing sugar. Yogurt on it's own unfortunately wouldn't work as it won't set and will make it go soggy. The yogurt on top of the store-bought ones is actually a yogurt compound not straight yogurt
