These Honey Roasted Carrots are not only super easy to prep but they also go with so many dishes this Christmas. You can have this as a side with a Roast Dinner, a BBQ or even with some salads mixed through. It can be used in so many ways and is a different way to make your classic baked carrot
Ingredients

500g Carrots

2 Tbsp Olive Oil

2 Tbsp of Honey
-
4 Garlic Cloves Crushed

Salt & Pepper to Taste

1-2 Tbsp of Flaked Almonds
-
4 Sprigs Parsley (Optional)
Directions
Pre-Heat oven to 180°C and prep your oven tray with baking paper
Chop your carrots into rounds about 1 cm thickness you don’t need to peel them
Mince your garlic and add with your olive oil and honey in a bowl and give it a good mix around until it is all combined
Add the honey dressing over the carrots and give it a good mix around until they are all covered
Place them onto your baking tray in one flat layer and bake away in the oven for about 45 minutes until they start to crisp up. If you find they are not crispy at the 45 minute mark simply crank the oven up to 200°C for about 10 minutes to add a bit more colour
Add to your plate and cover with the almonds and parsley and enjoy. I like to eat these hot but you can eat them once cooled as well

FAQ and Notes:
Q. Can I serve this without nuts we have an allergy?
A. Of course you can! These are delicious either way so if you can't have nuts just leave them off
Q. Can I prep this in advance?
A. Yep you can, you can cut the carrots in advance and leave them soaking in water, just make sure that you pat them dry before you add the oil etc. You can mix the honey and oil etc as well. You can add the oil & honey mix to the carrots if you like but just note if you put them in the fridge the honey may go hard.
Q. Can I use any honey?
A. Yes you can do any honey that you have at home should work perfectly
