I love honey roasted carrots they are such a simple way to jazz up the humble carrot and can accompany so many different dishes
Ingredients

4 Carrots top and tailed and cut in half then half lengthwise I don’t bother to peel them

2 - 3 garlic cloves peeled and minced you can as much as you like depending on preference

2 Tbsp Honey and a little extra to drizzle
Directions
Chop your carrots and pop them into a pot of boiling water for 10 mins or until just soft, don’t overcook them
Once boiled drain and dry them and you can let them cool a bit
Preheat your oven to 180c
Mix your honey and garlic & then pour over your carrots, if your carrots are hot it will become too runny so make sure they have cooled down
Place on a baking tray or in a pan with baking paper or your roasting tray
Cook in the oven for 40 mins and then up the temp to 200c and bake for about another 10-15 mins to get a bit more colour on your carrots but just keep and eye on then and take them out at your desired crispyness, you don’t want to burn

- These are great for a roast of BBQ too and make such a delicious side
- You can add some coriander on top as well if you like, I think it adds a nice bit of flavour
- You can make the carrots the day before as well if you like but boiling them and then roast them up the day of your event or dinner etc to save time.
