Marry Me Orzo is that perfect combination between tomatoey and creamy. It is packed with delicious flavour but so easy to make in 1 pan. It is the perfect weeknight dinner when you want something hearty without spending hours in the kitchen
Ingredients
2-3 tsp of olive oil
1 large onion finely diced
3 large garlic cloves crushed
250g of sundried tomatoes drained (*See note 1)
2.5 Tbsp of Tomato Paste
400g orzo/Risoni pasta
1 Litre chicken stock
1 cup water
200g Thickened Cream
70g parmesan cheese (Parmigiano) (See note 2*)
90g Spinach
½ lemon juiced
Salt & pepper to taste
Directions
Dice onions into small pieces
Add your olive oil into your pan on a medium heat and add in your diced onions to cook for a few minutes until they start to soften. We want them to slightly brown lightly, not burn so keep an eye on them
Add in drained sundried tomato and tomato paste. Cook off the tomato paste for a minute or 2 in the pan, mixing it around with your onions and tomatoes
Add in orzo pasta, stir through. Add in chicken stock and water. Bring to boil, then reduce heat to a lower heat to gently simmer and cover with a lid. Every couple of minutes give it a mix around so your orzo doesn’t stick. Cook for about 15 minutes until the orzo is just cooked.
Take off your lid, pour in the cream, parmesan cheese, and spinach. Stir until thick, combined and spinach wilted.
And serve to enjoy, you can add some extra parmesan & semi sundried tomatoes on top.
