One of my favs to mix up lunches & perfect for lunchboxes, they also work great for an afternoon tea too 

Ingredients

  • 5 Regular Eggs

  • 100ml cream

  • 150g approx mushrooms chopped

  • 1 onion chopped

  • 1 large bacon rasher

  • 1 small capsicum chopped or 1/2 a big one

  • 2 Handfuls Spinach

  • 1 tsp Italian Herbs

  • 3-4 cloves garlic minced

  • 2 Sheets of Puff Pastry - Frozen

  • Salt & Pepper to taste

Directions

  1. Preheat oven to 180c

  2. Cook your onions on medium for a couple of minutes and add in the mushrooms continue to cook and add garlic & 1/2 tsp herbs cook until browned & water has evaporated from mushrooms. Remove and cook bacon (you can cook it together but i like to make my bacon a little crispy) add capsicum, spinach & 1/4 tsp italian herbs just before its ready and cook for 1 -2 mins, mix all veg together & leave to cool you can pop in the fridge

  3. Mix Eggs & Cream with remaining 1/4 tsp of italian herbs

  4. While mixing let pastry sit on the bench for a minute and the cut into circles using a egg ring, cookie cutter or even a glass whatever works

  5. Pop into a baking tray sprayed with olive oil or a little butter & poke a few times with a fork in the base and make sure its flush in the pan

  6. Bake for a about 4-5 mins on its own, I Don’t worry if it puffs a little it will deflate.

  7. Take them out add a little egg mix, then the veg about 1tsp on top dont mix it in it will do it itself, and top with parmasen. I like mine with lots of filling over too much plain egg but if you don’t add less. Add more egg mix on top if it needs

  8. Cook for 20 mins or until golden brown & enjoy hot 😋
