That Nando's sauce that is so delicious makes for a fantastic easy tray bake

Who doesn't love a 1 tray bake, especially for a busy weeknight meal when you need something easy
Ingredients
-
Nando’s Peri Peri chicken. I find the spice ok but I love spice so go a mild if you can find it or try the lemon & herb one

4 Chicken Thighs
-
2.5 Mixes coloured capsicums sliced
-
1 red onion sliced into chunks
-
1/2 tsp of garlic powder
-
1/2 tsp of oregano
-
A couple of sliced of pumpkin diced
Directions
Add about just under 1/2 the bottle of Nandos sauce on your chicken and cover to marinate for a few hours at least ideally but if you don’t have time you can just coat the chicken and cook it right away
Chop your veg and place in a baking tray that has sides, as we are cooking it in one pan we want it to have room for any liquid to not spill over. While your chopping preheat your oven 200°C
Then add a drizzle of oil not too much you just want enough to lightly coat the veggies
Add the garlic powder, oregano and a drizzle of the nandos sauce and give it a good stir. If you are using the Garlic nandos sauce just use oregano no garlic powder
Place the chicken on top of the veggies and pull some of the veggies out from under the chicken to get a bit of colour too.
Bake in the oven for approx. 45 mins until your chicken is cooked. I then take my chicken out, cover it with foil to rest and cook the veggies for another 10-15m minutes to add some more colour to the veggies that had been sitting under the chicken. I also sometimes add a little extra nandos sauce at this stage too if it needs it, just a little though. Your chicken should stay hot under the plate if not just add it back to the oven for a couple of minutes at the end to warm up again
I then load up my plate with some veg, chicken and scoop over the sauce in the bottom of the tray its delicious 😋

Recipe Note
- If you find it going to brown too quick as in you think it will burn cover the whole thing in foil
- if you find the veggies underneath need a little more browning once the chicken take the chicken out to rest and pop them back in to bake for 10 mins or so or you can up the temp to 220°C and do it for a little less. The extra time just helps it have that time to cook a bit more
- Add some corn or rice to your dish as well if you like
