Such a great delicious side dish that's easy to make and something a little different. I found this original recipe on Philips Cooking Instagram and it is delicious

Ingredients

2 Brown Onions
-
2 Tbsp of Olive Oil
-
2 Potatoes thinly sliced (Desiree)
-
3 Tbsp of Unsalted Butter, Melted
-
2 Tbsp of Chopped Rosemary or you can use thyme
-
½ Cup Cheddar Cheese Grated
-
⅓ Cup Parmesan Grated (or Parmigiano)
-
½ Cup Mozzarella Grated
-
Salt and Pepper to taste

1 Sheet Frozen Puff Pastry

1 Egg
Directions
Add oil into your pan, he used a saucepan but I just used a normal pan with a pinch of salt and cooked my onions slowly to brown. You want a caramelisation & to soften not to burn. Set aside and slice your potatoes. If you have a mandolin this will be much easier if not just slice thinly and carefully to watch your fingers
Preheat an oven to 210C
Add potato, caramelised onions, butter, rosemary (or thyme) salt and pepper and give it a mix (i realised i made a mistake and used oil here instead woops 😅)
Place your pastry on baking paper or baking mat on your tray & lay half the potato mix over in a circle leaving a border of about 3cm. Then add half the chesse and layer again with potato, cheese and onions
fold up the edges over the potatoes it only folds a little over and don’t be afraid to scrunch it a bit it doesn’t need to be perfect
Add your egg wash and cook for about 35-40 mins until golden brown
Serve hot cut up into pieces and enjoy. We had this with skewers and salad and it was delicious

- Use Desiree if you can but this will work with others as well
- You can use whatever herbs you like with this, the original recipe uses Thyme but I used Rosemary. You can easily use Italian Herbs too
