This is a favourite breakfast of mine to have especially in Summer when the tomatoes are juicy and fresh! The salad can be made in advance to save time and honestly the Pico De Gallo can be made without actually measuring I usually just eyeball how much I am adding of everything but the recipe is below
Ingredients
- 🧡 2 pieces of your favorite bread
- 🧡 1/2 -3/4 of an avocado
Pico De Gallo:
- 🧡 1/4 Red Onion diced
- 🧡 150g of cherry tomatoes diced
- 🧡 1 tbsp of Jalapeños chopped up you can use less (i use the marco polo brand)
- 🧡 3/4 cup of Coriander chopped
- 🧡 1/2 a lime
- 🧡 A little bit of Jalapeño juice again optional
- 🧡 Salt & pepper to taste
Directions
🧡 Dice all your Pico De Gallo ingredients and mix together then add the lime juice, jalapeño juice and salt/pepper. You can make this in advance and leave it in the fridge I made mine Sunday for a salad and had it the next day on this
- 🧡 Toast your bread
- 🧡 Spread your avocado you can add as much as you like
- 🧡 Then top with your salad mix & if you made the salad in advance add a sprinkle of salt & pepper not too much though

Recipe Note
- Pico De Gallo can be made in advance and popped into the fridge to use for this one, it is spicy from the Jalapeno's but if you hate spice you could use cucumber to get the freshness of the salad.
- You can also add less Jalapenos and also not add the juice too this will be less spicy. You can add a little but extra lime or even a little olive oil too.
- I prefer the Sliced Jalapenos in the jar you can get rather than chopping up a Jalapeno
