Golden puff pastry filled with sweet Pistachio Papi paste, twisted into Christmas tree shapes and baked until flaky and festive, an easy holiday dessert. Served on a skewer for easy individual serves and eating
Ingredients
-
2 sheets of Puff Pastry (*see note 1)
-
2-3 Tbsp of Pistachio Papi spread (or your fav pistachio paste or measure with your heart π (*see note 2)
-
2-4 Fresh Raspberries broken up
-
Icing Sugar for dusting *Optional
Directions
Preheat your oven to 180Β°C and get a baking sheet an line with baking paper
Get your Puff Pastry out to sit & soften while you get all your other ingredients ready
Spread out your pistachio spread onto one piece your pastry and then break up some raspberries on too we donβt want them whole as it will be hard to shape. You can leave them out if you like. Once done pop the second sheet on top
Slice into about 1.5-2cm strips and then fold into a tree shape, start bigger then go smaller as you move up and pop a skewer through the center. You can see how I do it in the linked Tik Tok if you need a visual. Leave a little gab between the layers so when it puffs there is a little but oof room for it to grow
Once they are all done melt a little bit of butter in 30 second burst and spread all over the trees, if you have a pastry brush its much easier to do otherwise just use a knife or spoon just donβt spill too much on each we only want it to coat the outside otherwise it may go oily
Bake away for about 20 mine or until golden brown
Take them out to cool a little and if you like you can spread some pistachio paste over (i popped some in a bowl in the microwave for 10-15 seconds to loose up) or some raspberries & icing sugar

FAQs & Notes:
- Puff pastry you can find in the freezer section in most supermarkets. I just use the premade one as it is super simple to use
- You can use any pistachio paste you like for this, I will say most pistachio pastes are on the sweeter side these days as they are more of a white chocolate flavouring as the base. So I wouldn't add extra sugar on the pastry or anything as it will become quite sweet. I love a pure pistachio paste without the sweetness but they are harder to find here in Australia at the moment.
Q. Can I add something other than raspberries?
A. Yes definitely you could just do pistachio, you could add pistachio nuts or strawberries etc. Anything you like. I just wouldn't make it too thick otherwise it may fall out as you try to put them together
