A golden puff pastry wreath filled with pistachio and raspberry, baked until flaky and festive. An easy dessert inspired by the Pistachio Papi flavour everyone loves. I made a savoury Christmas Wreath and decided I had to do a dessert version too
Ingredients
-
2-3 tbsp of @pistachiopapiofficial spread
-
1 Sheet of puff pastry, i made this a smaller version but you can make it a bigger one if you like just double it and I use the @pampaspastry
-
1 punnet of Raspberries
-
½ tbsp of crushed up pistachios
Directions
Preheat your oven to 180°C and line a baking tray with baking paper
Get your pastry out and let it warm up a bit before spreading over the pistachio spread onto the pastry just leave a little gap at 2 ends
Cut it into 4 equal squares and then roll the squares up into little logs
Then cut those logs in half with a sharp knife or pizza cutter
Roll the halves into scrolls you want the closed end facing down and the cut side facing up
Melt about a tsp or so of butter and spread on with a pastry brush if you have one if not just use a spoon or knife
Bake for about 15- 20 minutes until golden brown
Arrange in a wreath shape & spread some more pistachio paste on top & then add some crushed pistachios & raspberries too

FAQ & Notes:
Q. Where is puff pastry from?
A. You can get it in the freezer or frozen section at most supermarkets, I like the Pampas brand in Australia but there is lots of brands out there you can use.
Q. Can I use any pistachio paste
A. Yes you can use any brand. I will say the pistachio pastes available in the supermarkets are on the sweeter side of things so I don't add any sugar etc to this
Q. Can I use any fruit to decorate
A. Sure can, use whatever you like to decorate, raspberries are an easy one as they aren't too big and they are the perfect Christmas Colour but you can use anything you like. Just note things like cut pineapple etc can make the puff pastry scrolls soggy so I wouldn't use that or something similar. Or if you do only put it on just before serving
