Such a simple weeknight dish for when you don't have much time to cook but still want something delicious
Ingredients

1 Pack of Dumplings I use Mr Chens Pork and Chive

2 Carrots julienned
-
2 Zucchinis julienned
-
1 Pack Shitake Mushrooms
-
Handful of Snap Peas
-
1 pack baby corns
-
4 Garlic cloves minced
-
2 Tbsp Soy Sauce
-
2 Tbsp Oyster Sauce
-
2 Tsp Fresh Minced Ginger
-
Chili to taste (optional)

A little olive oil to cook veggies and dumplings
Directions
Cook your dumplings as per the instructions on your dumpling pack, remove from pan and set aside
Add in your mushrooms if cooking, I like to add them first to get a little colour on the mushrooms and make sure they cook. Cook for a couple of minutes
Add remainder of veggies and cook for approx. 3 minutes or until veggies are cooked to your liking you don't want to overcook these and we will continue to cook a little longer with the sauce. If you overcook them they will become a bit mushy
Add your garlic, ginger and sauces all into the pan and add cooked dumplings into the pan with veggies and cook for another 3 minutes stirring occasionally to make sure it coats all the veggies and your sauce thickens
That's it, it's all done! Serve right away and enjoy

Recipe Note
- You can really make this your own add whatever type of dumplings or whatever veggies you want into the stir-fry and you can simply add another 1/2 serve or full serve of the sauce if you need more. There isn't really rules with this dish and it's so easy to customise
- Don't overcook the veggies but if they aren't cooked enough for you, you can cook them a bit longer to your liking
- If you want to make this to have leftovers the next day my suggestion is to only add as many dumplings as you will eat the first night and then cook some fresh ones and then add the veggies into pan to reheat with the dumplings. Dumplings don't heat up the best so its better to have them fresh.
