I love to cook and be in the kitchen but I don't have time for lunches that take ages to prep. I need something quick and easy and these tuna bowls are perfect for those busy lunches where you will want something delicious and healthy that keeps you going throughout the afternoon. And using the quick 40 second rice bowls means it's also great for the office

Ingredients

🧡 1 Rice cup I used Jasmine Rice

🧡 1 Can of Tuna any is fine

🧡 About 9 or a small handful of cherry tomatoes cut in 1/2

🧡 1/4 of Cucumber cut into small ¼ pieces
- 🧡 1/4 of a capsicum cut into pieces
- 🧡 A few Jalapeños cut into pieces this is optional if you don’t like spice don’t add it
- 🧡 Salt & Pepper

🧡 1 Tbsp of your fav dressing I used a Green Goddess, but a ranch, mayo or even an avocado dressing would work well
- 🧡 A tbsp of parmigiana cheese or add your fav cheese
Directions
- 🧡 Cook your rice as per the instructions
🧡 Chop your salad up into pieces and mix it all together
🧡 Drain your tuna if its in oil you can drizzle on top of the salad
🧡 Add your Rice first, Tuna, Salad, Cheese and dressing to bowl with some salt & pepper to taste
Recipe Note
Expert Tips, Variations and FAQ's:
- You can use any tuna you like or even salmon if that is your preference. There is some great flavoured versions that would work well too.
- You can add whatever you like into this salad, you could add red onion, avocado, carrot, lettuce or spinach etc. It is a great one to use some of your salad goodies up
- Any dressing works well for this, you can go more of a zesty option or stick to a more creamy version, a yogurt dressing works well too. But this is also a great way to mix up your salad if you are eating it often just switch up the dressing to get a new flavour.
