Ingredients
- π₯ Cous Cous about 1/2 for 2 you can add as much as you like though
- π₯ About a 1/4 of a chopped and baked pumpkin π
- π₯ A little olive oil, herbs of your choice for your pumpkin I do rosemary, onion powder, garlic powder
- π₯ Can of your fav tuna or salmon whichever you prefer
- π₯ 1 cucumber chopped in 1/4s
- π₯ 1/2 a capsicum diced
- π₯ handful of cherry tomatoes π chopped in 1/4
- π₯ 1/2 a lemon
- π₯ Your fav dressing, I used ranch
- π₯ Salt & pepper to taste
Directions
π₯ first dice your pumpkin into small cubes and bake in the oven until golden approx. 45 mins at 180C but this depends on your sizes so keep an eye on them as they can turn to burnt quickly
- π₯ When its nearly ready make your cous cous as per the instructions
- π₯ Chop up all your salad
- π₯ And assemble, cous cous, pumpkin, salad and tuna
- π₯ Add a dash of salt & pepper & squeeze with lemon juice and drizzle with dressing
