A delicious sweet snack or dessert option that you could even be a delicious school lunchbox snack
Ingredients

1 Sheet of Puff Pastry

90g of raspberries
-
A squares of white chocolate
-
1 egg for egg wash
Directions
Preheat oven to 180C and get your pastry out to sit for a few minutes
Mash about 90g of raspberries I used frozen and defrosted them first in the microwave they donβt take long or you can use fresh too. Only mash them a bit. You could use Jam but I think the fruit is nice
Pop your raspberries onto your pastry making 2 rows and leaving a gap around each one to close so 6 dallops of raspberries. If your raspberries have a lot of liquid drain it a bit first to get rid of excess liquid
Grate white chocolate on top I only needed 1 piece of chocolate for these ones
Cut the pastry in half fold the pastry over first and then cut in between each gap in the middle of them. Use your fork to join the sides together to close the parcels on each open side
Brush with egg wash and bake away for about 20 mins until your pastry is golden brown on top this will depend in the size

Recipe Note
- If your raspberries have a lot of liquid then you can drain some off before putting the raspberries onto the pastry, we don't want too much excess liquid in there
- These are definitely a bit of a sweeter snack with the raspberry and white choc but still delicious
- You could even add some crushed up pistachios too which would go really well
