This is a perfect grown up open toasted sandwich to make your lunch feel gourmet without too much effort

Ingredients

250g punnet of tomatoes
-
2 Pieces Marinated Goats Cheese*
-
Herbs onion powder, garlic, salt & pepper,
-
¼ of a lemon juice
-
Approx. 1tsp of olive oil

2-3 Pieces of Sourdough Bread*

2 Tbsp of Green Basil Pesto
Directions
🍅 First up pre-heat your oven to 200C add 1 250g punnet of tomatoes into a oven safe baking dish or tray (one with sides is best) add some Italian Herbs, onion powder, garlic, salt & pepper, ¼ of a lemon juice and about 1tsp of olive oil into the dish and give it a good mix. I used the olive oil from my Marinated Goats Cheese because I didn’t have any garlic, you can use this it use normal olive oil. Just don’t get cheese in the tomatoes. Add into the oven and bake away for approx 30 mins or until nice and golden brown, you want them brown and a little char but not burnt
- 🍅 Toast your 2-3 pieces of bread I use sourdough
- 🍅 Spread about 1 Tbsp or enough to cover the bread of Pesto, a good flavourful pesto really makes a difference
- 🍅 Spread about 1/3 of the tomatoes on each bread if you are just making 2 slices you can spread it in 2 or save the leftovers for later. Then add some broken up goats cheese on top I used about 1 piece per slice of @meredithdairy but add as much as you like.
- 🍅 Top with a little salt & pepper and enjoy ☺️

- *I use Meredith Valleys Marinated Goats Cheese but you can use any you like or even a ricotta etc. Any of your fav soft cheeses
- I use sourdough for bread in most things but you can use whatever bread you prefer to use it is all about personal taste
