Love a pinwheel but want something a little different than the tradiotional ham & cheese?
Ingredients

1 Sheet of Puff Pastry
-
2 Tablespoons of tomato pesto
-
1/4 of a capsicum
-
1 cup mozzarella grated
-
9 slices of salami
-
Parmesan for the top
Directions
Preheat oven to 180c and get your puff pastry out and let it sit for a couple of minutes to become a little softer to work with, this should only take a few moments you don’t want leave it too long or it will get too soft
Cut your capsicum nice and small
Add the tomato pesto to one whole side of the pastry just leave a little gap on the edge about 1cm so you can stick the pastry together when you roll it
Add the salami, capsicum and mozzarella all over, then start to roll your pastry up you want it snug but you don’t need to push too hard and use your plastic on the bottom to help guide it & help roll it over
Ones it is rolled into a log, cut into 1-2cm slices using a sharp knife. a sharp knife will be your friend here
Pop on a baking tray lined with baking paper, if any are a bit misshapen just lightly push them into the circles, they don’t need to be perfect and add some parmesan on top before cooking
Bake away for about 15 minutes or until the pastry is golden in colour
That’s it enjoy, any left overs Store in and airtight container in the fridge or freezer

Recipe Note
- You can use any pesto that you like for these and also if you aren't allowed nuts at school you can find nut free pestos
- If you don't like salami you can also use ham too instead it will go lovely with the pesto
- Mozzarella is my fav cheese to use but you can use cheddar or tasty etc too if you like and if you don't have parmesan or parmigiano then you can use any cheese for the top
