These Roasted Smashed potatoes are the best potatoes to have the crispy crunchy deliciousness with a slightly soft fluffy inside are incredible! You have to try this one.
Ingredients

🥔 1 kg of small baby potatoes you can usually find them in a bag

🥔 1 Tsp of salt for boiling water

🥔 A few rosemary sprigs

🥔 1-2 Tbsp of oil

🥔 1 Tsp Italian Herbs

🥔 1 Tsp Onion Powder

🥔 1 Tsp Garlic Powder
Directions
🥔 Add whole potatoes (don’t cut or peel these leave them whole with skins on) to a big pot and add salt & hot water to bring to a boil, boil for approx. 25 mins or until soft, this will depend in the size so keep an eye on them
🥔 About 15 minutes before they are nearly ready preheat oven to 200°C
🥔 Pop potatoes on a tray with baking paper and then using a fork, masher, cup whatever you find easiest push the potatoes down, don’t worry if they break apart a little its ok
🥔 Now drizzle oil over if you have a spray oil bottle even better as it covers more evenly, you don’t need to measure just drizzle over and add your herbs, these are just sprinkled over each potato we don’t really measure it our to add it on top. Some people use butter for this I just use the oil
🥔 Cook away in the oven for approximately 45 mins or until golden brown and crunchy on the outside
🥔Add a good dash of salt and enjoy

Recipe Note
- These honestly are absolutely delicious and really simple to make, I tried a masher, fork and glass to mash these down and I actually liked the fork best the masher was good as well it helped to push down a bit more evenly. But do what works for you, you can try the different methods to see. If you are using a glass just be careful not to push to hard and break it
- You could boil the potatoes ahead of time and then just pop them in the oven when you are ready
- Serve this with your fav dipping sauce, I actually just liked them on their own without the dipping sauce just with a good dash of salt
