This is such a great way to use up any wraps you have or to switch up your wrap lunches too. Spinach and ricotta quesadilla wraps with a golden, crispy exterior. A quick and easy lunch or light dinner idea.

Spinach & Ricotta Quesadilla Wraps Recipe

Ingredients

  • ¼ of a brown onion, chopped

  • 1 garlic clove, minced

  • ½ tsp of olive oil

  • ½ tsp Italian herbs

  • 150g ricotta (*see note 1)

  • 40g spinach

  • 1 Simson’s Pantry high protein extra large wrap (*see note 2)

  • ½ lemon 🍋

  • Salt & pepper to taste

Directions

  1. Chop your onion & mince your garlic, add to a pan with olive oil and cook on low-medium heat for a few minutes until your onion is cooked through. We want it golden & cooked, not burnt, so don’t make the temperature too high.

  2. Once cooked, add in your spinach & Italian herbs. Cook for about 1–2 minutes until wilted, then take out to cool slightly while you get your other ingredients ready.

  3. Add your ricotta to a bowl & get your wrap ready. Add the onion mix to your ricotta & give it a mix.

  4. Spread over half the wrap, leaving the other half empty. Then, once all your mixture is added, fold the empty side of the wrap over the top. (if you have a smaller wrap you can make 2)

  5. Pop into a dry, large pan, no oil needed, and cook on low-medium heat to crisp up the outside. Cook for a few minutes & flip to cook the other side.

  6. Take out & chop into 4 triangle pieces, squeeze your lemon over, add a dash of salt & pepper & enjoy
