The Mediterranean toastie is absolutely delicious yet so simple to make utelising the deli grilled vegtables
Ingredients
- 🥪 2 pieces of sourdough toast or your fav bread
- 🥪 Garlic sauce, or you can use mayo, chili sauce, aoili whatever you like 🥰
- 🥪 Grilled veggies from the deli (most fruit shops with delis have the best selection) I used Pumpkin, Eggplant, Mushrooms, Semi Sundried Tomatoes, Artichokes but also if any of these you don’t like just take them off
- 🥪 2 -3 slices of mozzarella I slice my own
Directions
- 🥪 Butter 2 Pieces of bread which will become the outside
- 🥪 Pop your sauce/mayo on the other sides
- 🥪 Add Mozzarella, all your grilled veggies, try to add flatter ingredients first and add the ofher piece of bread
- 🥪 Add to a frypan on a low-medium heat i like to cook them lower and slower to cook and melt the cheese but not burn. It is a thicker sandwich so if you have a sandwich press it will make if a bit smaller
