Boy did this Viral Meghan Markle or (Meghan of Sussex) Pasta Recipe cause some controversy. But I actually really liked it. In fact I am adding it to my menu plan next week. It is light, easy to make and have some good flavours. Now I did change it up a bit by cooking off the garlic because that's a non negotiable to me. It is also great if your not a huge cook or you don't have alot of time. It may not be traditional but it is a easy dish to make that tastes nice. I also really liked her show, it's an easy watch and just a lovely celebration of home and cooking.
Ingredients
- π 300g of Cherry/small tomatoes, try to get in season flavourful ones
- π 4-5 garlic cloves minced
- π About 1-2 tbsp of olive oil
- π Zest of 1 lemon
- π Handul of Swiss Chard (Silverbeet)
- π Handful of Spinach

π Good Handful of Parmigiano/Parmesan & extra for serving

π 250g of Fettuccine or Spaghetti pasta I used 1/2 a pack but use a full if you need more serves
- π A good dash of salt & pepper
- π Approx 3 cups of boiled water depending on your pan size
Directions
- π boil your kettle
- π This is what i did differently. Mince your garlic & cook off in pan with a good dash of olive oil for about 30 seconds until fragrant on low-medium heat
π Add in your halved tomatoes and add another good dash of olive oil & salt/pepper then mix. I leave the heat on and let them cook as I open the pasta then add that in the pan with the lemon zest
- π Add your boiling water to the pan you want to make sure the pasta is covered with water
π Cover and let come to the boil for a few minutes then take off the cover & add the chopped chard & continue to cook for about 8-10 minutes this will depend on your pasta type and amount. About a minute before itβs done add the spinach then parmigiano cheese and cook until pasta is cooked and liquid reduced, I did leave a little liquid in the pan to drizzle over though

Expert Tips, Variations & FAQ's:
- This is a simple dish to make that you can also switch up a bit. If you don't like Chard or don't have any you can add spinach or kale. Or you could just leave it out all together
- I would highly recommend cooking off the garlic first for better flavour
- You could also add some onions in too but I would cook these off with the garlic
- If you don't have Parmigiano which is Parmigiano Reggiano you can use Parmesan Cheese
- This is lovely the next day too, simply reheat it in a pan and if needed add a dash of water
- Cooking time will depend on the pasta you use, so read the instructions to see and keep an eye on it as it cooks
- If you need a bigger serve simply double the recipe just make sure your pan is big enough, I also like a good ratio of tomatoes in this too so I would double all the ingredients if you are doubling the pasta
